WThis is an easy version of a beverage from a new drinks list. Designed as a large-volume prepared mix that is bursting with the flavours associated with festive period, rendering it perfect for hosting a holiday party. Reserve the remaining cordial for breakfast cocktails, desserts, or to make additional servings of this cocktail.

Ingredients for the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Premix (makes 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Combine all the items in a pot, heat until it reaches a light boil, agitating to dissolve. Then, take off the stove and let it to reach room temperature entirely. Transfer into an sealable bottle, seal and store chilled, it can be stored for around four weeks.
To make Batch Mix: Mix every spirits and syrup into a sizeable container, let it rest for one hour, then strain best through a fine cloth, to ensure it's completely strained.
To serve: Pour 85ml of your premix into a stirring glass containing ice, and stir gently for a minute until cold. Pour into a cold coupe glass or equivalent, garnish with some cranberries and complete it using a light spray of mandarin oil over the drink.
